In Kerala its called Chena Thoran or Chena Mezhukkupuratti.
Elephant Yam is a as an edible tuber, which is highly consumed in Africa followed by some Asian countries.
It is good source of nutrients like proteins, omega 3 fatty acid, fiber, vitamin ,B6, carbohydrates and minerals.Elephant Yam is also called Suran in Hindi, Ol in Bengali, Senai kizhangu in Tamil.
The root of the Elephant Yam is efficient in treating inflammation of the eye, piles, hypertension. Its a rich source of essential fatty acids (Omega-3 fatty acids) and high in vitamin B6. Consumption of this vegetable increases the immunity level of our body.
Elephant Yam can be prepared easily into a very tasty side dish.
– Cut the brown crust of the yam.
– Chop into small pieces and put them into a bowl of water and salt.(some yam causing itching in the tongue, this process ensures that the itching doesnt happen)
– Heat the coconut oil in a pan, add the crushed shallots and garlic.
– Saute till garlic changes colour.
– Add in the curry leaves and saute for 10 seconds.
– Add in the red chilli flakes/powder and saute.
– Add in the chopped Elephant yam, grated coconut and 3/4 cup water along with salt to taste. mix well.
– Cover and cook on medium flame till all the water is evaporated.
– Serve as a side dish with rice.
– Using Coconut oil, gives the authentic taste. In case you don’t want to use coconut oil, use normal cooking oil.
