Aloo Palak-Dry

  • 2 Cups Finely Chopped Spinach
  • 2 Big potatoes - Boiled, peeled and Cubed
  • ½ Tsp Cumin Seeds
  • ½ Tsp Garlic - Finely Chopped
  • ½ Tsp Ginger - Finely Chopped
  • 1 Whole Dry Red Chillies - Optional
  • 1-2 Green Chillies - Finely Chopped
  • 1 Tsp Coriander Powder
  • ¼ Tsp Turmeric Powder
  • 1/8 Tsp Asafoetida
  • 1 ½ Tbsp Oil

Aloo Palak – Dry

Aloo Palak is a typical Punjabi recipe which is very easy and simple. It is a combination of cubed potatoes with chopped spinach. This is usually served hot with rotis or parathas.

This is a dry variety. The Curry variety is similar to Palak Paneer where Aloo/Potato can be substituted for Paneer/Cottage Cheese.

Method:

– Heat the oil in a pan and add the cumin seeds.
– Once the Cumin seeds crackle add the whole red chilli, finely chopped garlic, ginger & salt. Stir for a minute.
– Now add the spinach, coriander powder, turmeric powder and asafoetida and stir.
– Cover and cook on low heat for 2-3 minutes.
– Now add in the cubed potatoes and stir fry for 5 minutes.
– Cover and cook for another 2-3 minutes on low flame.
– Serve hot with Rotis or Parathas.
