Ridge Gourd  Stir Fry

2-3 Servings ~ 15 Minutes
  • 1 Medium Size fresh Ridge Gourd - Cut to Small pieces
  • 1 Big Onion - Finely Chopped
  • 2-3 Green Chillies - Slit to 1/2 or Pasted
  • 4-5 Curry Leaves
  • 1/4 Tsp Mustard Seeds
  • 2-3 Tbsp Grated Coconut
  • 2-3 Sticks of Coriander leaves (Optional)
  • Salt to taste
  • 2 Tsp Oil

Ridge Gourd Stir Fry

Simple and fast cooking.

Method:

– Heat oil in a shallow fry pan.
– Add mustard seeds and allow spluttering.
– Add onions and green chillies and saute till onion is translucent.
– Add curry leaves and stir.
– Add the chopped ridge gourd and add salt and mix well.
– Cover and lower flame to minimum.
– Stir in between and if its getting too dry sprinkle some water.
– Once the Ridge gourd is soft, add grated coconut and coriander leaves and mix.
– Serve as an accomplishment with rice & sambar or rasam.
