Simple and fast cooking.
– Heat oil in a shallow fry pan.
– Add mustard seeds and allow spluttering.
– Add onions and green chillies and saute till onion is translucent.
– Add curry leaves and stir.
– Add the chopped ridge gourd and add salt and mix well.
– Cover and lower flame to minimum.
– Stir in between and if its getting too dry sprinkle some water.
– Once the Ridge gourd is soft, add grated coconut and coriander leaves and mix.
– Serve as an accomplishment with rice & sambar or rasam.
