This is a very simple and oil free dish, thus making it healthy.
2 Medium Egg Plants/Round Brinjal
1 Medium Onion – Finely Chopped
2-3 Tbsp Fresh Coriander – Finely Chopped
2 Tsp Green chillies paste or Per taste
1 Tsp Tamarind Pulp
Salt to taste
Cook the egg plants / round brinjal in a pressure cooker for 3-4 minutes after 1st whistle.
Cool and remove skin. Mash and keep aside.
In a mixing bowl mix all the ingredients along with the mashed brinjal.
Serve with Akki Rotti or chapattis. Tastes great too when eaten with hot rice with a spoon of ghee.
