This is a unique soup for the hot summers. This thirst quencher has a blend of everything… its crunchy, soft, sweet, salt, and sour; of course with all the benefits of a soup. Try this and enjoy.
2 Ripe Mangoes
3 Tbsp Red Onion (finely chopped)
3 Tbsp fresh lime juice
2 Tbsp fresh Coriander/ Cilantro (finely chopped)
2 cups cold water
Wash, peel and cut 1 mango into cubes and the other into big chunks for puree.
Wash and cut 1 Cucumber into big chunks and the other into small pieces. Keep aside.
In a mixer add the mango and cucumber chunks and make a smooth puree. Transfer this into a bowl.
Add chopped onions, cubed mangoes and cucumber, lime juice and water to this puree.
Fill a large bowl with ice water and keep the soup bowl in the centre. Stir the soup until it cools. Garnish it with cilantro before serving.
Note: Alternatively instead of stirring the soup in cold water, it can be kept in the refrigerator for 15-20 minutes before use.
