Also called Bitter Melon around the world. People who are in pre diabetes stage can take bittergourd juice on an empty stomach first thing in the morning everyday. Bitter Gourd 1 Medium (deseeded and cut to small pieces)
Tamarind pulp 2-3 Tbsp
Red chillies powder ½ Tsp/ per taste
Onion 1 medium (finely chopped)
Sambar powder 1 Tsp
Jagree 1 piece (lemon size)
Green chillies 1 (slit to ½)
Mustard 1 Tsp
Curry leaves 6-8
Coriander leaves 2-3 Tbsp (finely chopped)
Grated coconut 2-3 Tbsp
Salt to taste
Oil 2 Tbsp
Cook bitter gourd till tender with a little salt and a small piece of tamarind. (Tamarind minimizes the bitter taste.) Drain and keep aside.
Heat oil in a kadai/wok and add in the mustard.
Once it splutters add in the onion, curry leaves, green chillies and sauté for 1-2 minutes till onion is half done.
Now add in the bitter gourd and sauté for another minute.
Add in the tamarind pulp, Jagree, red chilli powder, sambar powder and grated coconut.
Add in ½ cup of water and cover cook for 5 minutes.
Garnish with coriander before serving.
P.S. : The darker the Bitter Gourd the better.
