Vegetable Kolhapuri


1 medium sized carrot,cut into 1/2 inch cubes.
1 medium sized potato,cut into 1/2 inch cubes
6-8 cauliflower florets
1/4 cup of green peas
1/2 inch piece of ginger
5-6 cloves of garlic
4 tbsp of oil
1/2 dry coconut(kopra),grated
8 cloves
8 black peppercorns
1 tsp of poppy seeds
1 tsp of coriander seeds
6 whole red chillies
2 large onions,chopped
2 large tomatoes,chopped
1 1/2 tsp of red chilli powder
1 tsp of turmeric powder
salt to taste
2 tbsp of fresh coriander leaves,chopped
For the kolhapuri garam masala:
1/2 tsp of saunf

1-inch piece of cinnamon stick
1/2 tsp of cumin seeds
2 bay leaves
2 black cardamoms
6-7 black peppercorns


-Boil carrot,potato & cauliflower in sufficient quantity of boiling salted water till nearly done & then add french beans & green peas.Boil for 5 more minutes.
-Drain & refresh in cold water.
-Grind ginger & garlic to a fine paste.
-Grind all the ingredients of the kolhapuri garam masala into a fine powder & keep aside.
-Heat 2 tsp of oil in a kadai.Add dry coconut,cloves,peppercorns,poppy seeds,coriander seeds & red chillies & saute till fragrant.
-Add 2 thirds of chopped onions & cook till it turns slightly brown.
-Cool,grind to a paste using half a cup of water.Keep aside.
-Heat remaining oil in another kadai.Add the remaining chopped onions & saute till brown.
-Add ginger-garlic paste & continue to saute till lightly brown.
-Add tomatoes,red chilli powder,turmeric powder,masala paste & 1/2 cup of water & cook for 2 minutes.
-Add the boiled vegetables,adjust salt & simmer for 4-5 minutes.
-Sprinkle kolhapuri garam masala powder & mix well.
-Garnish with coriander leaves & serve hot.
