Panchaamrut is a dish from Maharashtra.This dish is healthy as it contains bitter gourd.This will be good with rotis,naans or even with puris.


1 bitter gourd,deseeded & cut like rings
8-10 pumpkin cubes
10-12 radish cubes
1/2 cup of peanut,roasted
1/2 cup of dry coconut,roasted
1/2 cup of sesame seeds powder,roasted
1/2 cup of jaggery
1/2 cup of tamarind pulp
5 green chillies
Mustard seeds,for tempering
Jeera,for tempering
Hing,for tempering
Curry leaves,for tempering
1/4 tsp of coriander powder
1/4 tsp of cumin powder
salt,to taste.


1.Heat oil in a pan.Add jeera,mustard seeds,bitter gourd,curry leaves & green chillies.
2.Mix well.Cover & cook well.
3.Add radish & pumpkin.Mix well.Cover & cook.
4.Add tamarind pulp,jaggery & coriander powder.
5.Add jeera powder water.Mix well.Cover & cook.
6.Add sesame powder,dry coconut,peanuts powder,salt & water.
7.Transfer it to serving bowl & serve hot.
