Paav Bhaji


>4 medium boiled & mashed potatoes
>4 medium chopped tomatoes
>2 medium chopped onions
>1 green capsicum chopped & deseeded
>1/4 small cauliflower
>1/4 cup green peas
>1tbsp garlic paste
>1tbsp ginger paste
>3tbsp oil
>3-4 chopped green chillies
>1 1/2 tbsp paav bhaji masala
>3 tbsp butter
>8 paav
>1/4 cup chopped coriander leaves
>2 lemons cut into wedges.

-Boil green peas in salted water till soft,drain,mash lightly & set aside.
-Heat oil in a pan & add three fourth quantity of onions.
-Saute till light brown.
-Add green chillies& ginger-garlic paste.Stir-fry for half a minute.
-Add half the quantity of tomatoes & cook on medium heat for three to four minutes,stirring continuously or till oil seperates from the masala.
-Add capsicum ,mashed peas,cauliflower,potatoes & one & half cups of water.Bring it to boil & simmer for ten minutes,pressing with back of the spoon a few times ,till all vegetables are completely mashed.
-Add pav bhaji masala,salt & remaining tomatoes.Cook on medium heat for two minutes & stir continuously.
-Heat half of the butter in a thick bottomed pan or a tawa.
-Slice pav horizontally into two & pan fry in butter for half a minute,pressing two or three times or till pav is crisp & light brown.
-Garnish the bhaji with chopped coriander leaves,remaining butter & serve hot with paav accompanied with remaining chopped onion & lemon wedges.
